Happy Friday! I have to work tomorrow..and there is a baseball tournament this weekend..hoping to get out early on Saturday to make the last game...but Sunday after church? Baseball, baseball, baseball .. :)

One of my favorite recipes for dinner...

I'm not sure if I've shared this before? Possibly, but I'm making it tonight, so thought I'd share it again...

I have the recipe book (one of the Pampered Chef ones), but it was online at Food.com.

California Quesadillas

Ingredients:

Units: US | Metric

• 2 1/2 cups monterey jack cheese, shredded
• 6 1/2 ounces marinated artichoke hearts, drained and chopped
• 1/3 cup black olives, chopped
• 2/3 cup salsa
• 1/4 cup fresh cilantro, chopped
• 12 soft taco-size flour tortillas
• 3 tablespoons butter, melted

Directions:

1. 1
   In a large bowl combine cheese, artichokes, olives, salsa and cilantro.

   Brush one side of the tortilla with the melted butter and place butter side down on a cookie sheet.

   Top with 1/6th of the cheese mixture. Top with another tortilla and brush with butter.

   Repeat until all tortillas and cheese mixture is gone. You should have six quesadillas.

   Bake 10 minutes at 450 degrees or until lightly brown. Watch them carefully.

   Cool 5 minutes then cut into wedges.

   Serve with additional salsa, sour cream, etc.

   You can also add grilled chopped chicken to the cheese mixture for a heartier quesadilla.

I add cooked chicken to mine...and then serve with sour cream, Mexican chips, and salsa...SO GOOD! Now, for the kids, I just do cheese and chicken..I haven't sold them on the above mixture yet..but trust me, it is tasty!

 

Somebody enjoyed the rain...

On Monday, we finally got some rain..it's been ages..and it was nice...

Bailey looks for any chance to don her raincoat and umbrella and go out and play in it...she had disappeared for a bit, and this is what I found..lol

She's crazy...

Something different...

On Saturday, we went to Atlanta Motor Speedway for the Great Clips 300 race..we were able to get cheap, general admission tickets through Great Clips, so we figured what the heck? Let's take the kids..and my parents went along too...

First off, I had no concept of how dang LOUD it is when the cars are racing..holy cow..ear plugs or ear protectors a MUST...

Poppie always remembers the binoculars...and of course, they fought over them :)

Things got a little wild towards the end..

and we lasted until around some laps in the 130's..everyone around me was smoking their cigs and making me sick and giving me a horrible headache..and the kids were getting bored too....that was enough for me...good times though...even if I had to come home and wash my hair at 11pm to get the smoke smell out or else it would make me nauseated all night and in the morning.. :)
